Freezing temperatures delay the sugar beet harvest, until today.
The 2012 sugar beet crop has overcome a tough harvest season with the drought, hail and now freezing temperatures.
This weekend's weather brought the Western Sugar Cooperative's harvest to a halt.
But at 11 this morning, the factory decided to continue harvesting.
Jerry Darnell with Western Sugar says the decision is clear cut when it comes to cold weather.
"What we did this morning is we went out and you look in the top of the beets, called the crown of the beet. And we look to see if there's any frost in the crown, if there's no frost in the crown of the beet we're able to buy the beets and store them long term."
Darnell says they expect to finish harvest by the end of October.
